Homemade Tomato Sauce

Note: this is not my spaghetti sauce, that recipe is closely guarded and about 10 pages long. I make my tomato sauce from scratch and is usually needed for another recipe like my spaghetti or marinara sauce. The only time I make tomato paste is when my dining room table is covered in tomatoes, but it is cheaper to buy vs making. I prefer Hunts. This batch of tomato sauce is going to be used for salsa, so am adding lots of color. The tomatoes I'm using is mostly Red Pride and a few Lemon Boy. Depending on the tomatoes used will change the color.

Takes about 30 minutes of prep time and 4 hours to cook.

 

 

What you need:

 

10 ripe tomatoes

 

2 Tablespoons Butter (the real stuff)

 

2 Tablespoons olive oil

 

1 onion, chopped

 

1 Bell pepper, chopped

 

2 Carrots, chopped

 

4 cloves of garlic, minced

 

either a 1/4 cup of fresh basil or 1/8 cup (4 Tablespoons) 

 

1/4 teaspoon Italian seasoning

 

1/4 cup of Burgundy or Chianti wine

 

1 bay leaf

 

2 stalks of celery

 

2 Tablespoons tomato paste

 

Directions

 

1) I highly recommend to chop everything up before you start putting tomatoes in the hot water

Bring a pot of water to a boil. Have another bowl of ice water. Put whole tomatoes in boiling water until the skin starts to peel, about 1-2 minutes.

 

 

Remove with slotted spoon and place in ice water. Let rest until cool enough to handle, then remove the skin.

remove top and remove seeds either squeezing out or spoon. I prefer to use my fingers.

 

Chop 8 tomatoes and puree in blender or food processor.

Chop the remain 2 tomatoes and set aside

If you want a stronger garlic flavor, let the garlic set in the olive oil for a bit with no heat. This will help the garlic flavor get into the oil.

In a large pot over medium heat, Cook onion, bell pepper, carrot, and garlic in oil and butter until onion starts to soften (about 5 minutes)

Pour in Pureed tomatoes

Stir in chopped tomatoes, basil, Italian seasoning and Wine. Put in Bay leaf and celery stalks (if you must cut them, keep them in big pieces since they will be removed later)

Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours

Stir in tomato paste and simmer for another 2 hours

Discard bay leaf and celery. You can serve it, use for another recipe, or can it
